“By Request” is all about food and the part it plays in our everyday lives—how it plays a part in our personal and collective memory; how it signifies specific times in our lives. The weekly column was part of the Honolulu Star-Bulletin’s Food section for decades under the stewardship of several different writers, and continues in the new Honolulu Star-Advertiser under Betty Shimabukuro. Readers write in about dishes they’ve enjoyed at restaurants, that they remember from childhood, that they’re just curious about. I try to find answers to a few of these mysteries. This cookbook is a second helping of stories and recipes that grew of out those requests. “By Request” has always depended on the kindness of great cooks willing to share. Enjoy the tales, enjoy the recipes. And if you find something really good? Pass it on. Great dishes should always be shared.
